The organ that produces a digestive enzyme that breaks down any fats, carbohydrates, and proteins in the food you eat is the pancreas. It makes the digestive juices that have these enzymes. However, the break down doesn’t happen within the pancreas itself. Instead, that happens in the small intestines.

This is the digestive system, after all, and the best way to get all that food to mix with the enzymes to break it down is to stick them both in a hollow tube. This way, the enzymes can be mixed in one area without starting to break down food that isn’t ready for that stage yet. When the food gets to the right places, the enzymes will start to break them down.
