Coconut milk, and recipes containing it, can be frozen well. There is one thing to be aware of when you freeze coconut milk. It often looks a bit grainy or curdled when you finish reheating it because it separates during the freezing process. This is natural. It typically will even out and return to normal when it’s nice, steamy, and hot.
This is simply done by reversing the freezing process. Like any foods that are frozen, it is best to reheat anything with coconut milk immediately before you want to eat it, or let it thaw out in the fridge if you plan to eat it the next day or it’s very frozen. Frozen enough that it won’t defrost quickly in the microwave, the oven, or on the stove.
