Baking soda or sodium bicarbonate is a water-soluble powder that produces carbon dioxide gas when mixed with acid and causes baked goods to form and rise. There are different recipes which require the use of baking soda especially in pastries because without it, the dough or the pastry will not rise properly and you will not be able to create the perfect baked goods.
