There are many types of Mexican food that is gluten free. Whether you cook it at home or order at your favorite Mexican restaurant, there are so many Mexican dishes that are gluten free such as the following: Baja tacos which are made with corn tortillas, Baja ensalada which can either be chicken, steak, grilled vegetables, grilled shrimp or carnitas, Adobe pie, mixed grill churrascaritas, free range chicken with roasted serrano pesta, carne asada, red chile crusted salmon, three chile sauce, chipotle cream, fresca, pico, chile con queso dip, chicken tamale, salsa vinaigrette, chipotle apple vinaigrette, corn tortillas, sweet corn tamalito, ranchero sauce, barbacoa, blacl beans, romaine lettuce, prairie fire bean dip, and red river salad.

However, it is worthy to note that if you are eating in a restaurant, ask your server for a gluten free menu just to be sure.
