Mexico uses a number of different kinds of spices that come in a variety of flavors. Domestic chili powder contains extra seasonings, such as cumin, garlic, oregano,salt, and coriander. Mexican cooks make a paste by mixing one tablespoon of chili powder, one teaspoon of flour, and two tablespoons of cold water.

To yield the correct flavor, the paste should reach a boil sometime during cooking. Other Common Seasonings. Other common flavors are cumin, coriander, chile powder and oregano. There are several varieties of oregano but for the mostauthentic taste in Mexican dishes Mexican oregano is preferred. This gives these dishes a rich earthy flavor.
