Deviled eggs are most often served as an appetizer. However, one may combine them with other assorted chilled foods to make a cold collation that can be very satisfying all by itself. Piping the filling into the eggs can create an attractive presentation. Dusting them with paprika or tossing on a sprinkling of minced chives will add delightful color contrast. Just to keep your friends guessing, you can always serve square deviled eggs.
Incidentally, the trick to perfect deviled eggs is to stir them regularly as they hard-boil so as to place the yolk dead-center in the cooked white. Accompaniments could be cones of salami or ham stuffed with seasoned cream cheese. Cucumber or watercress sandwiches would make a perfect (mild) foil. As an alternative to the finger sandwiches, these salmon and caviar coins would do well. Stuffed cherry tomatoes or genuine Danish rollmops, would be a perfect flavor curve-ball. Serve all of the above with a well-chilled European Pilsner or Champagne and call it a day.
