The purpose of putting herbs with a meat or vegetable is to provide flavor or enhance the flavor of the meat or vegetable. Certain herbs can enhance the taste of the mushrooms as well. These herbs include like ginger, thyme, rosemary and tarragon. If you are wanting the dish to be spicier, red pepper flakes go well with mushrooms.
There are some other herbs that go well with mushrooms, but rice should be included so that it will absorb the flavor of the herbs. These herbs include curry, turmeric and coriander.
