Unfortunately, there are catering firms that sell chicken nuggets that are not made of chicken. In the more reliable processing plants, the chicken used is breast chicken but obviously not from free range chickens. They will be the cheapest birds in order to keep costs down.
So nuggest are made from seasoned chicken breast, along with a natural proportion of chicken skin used for both flavour and as a binder. After trimming, this breast meat is sliced then ground. The nuggets are first made in a factory where the chicken slides down a belt. The worker picks the chicken breast out to use for the nuggets. After the pieces are selected, the meat is grounded up and then seasoning is added. They are then cut into little pieces and put into a freezer.
