When you say pan crust pizza, this means that you are referring to some sort of deep-dish pizza. This means that you can expect that the crust of the pizza is going to be fluffier. It will also have a thicker crust as compared to the hand-tossed pizza.
The hand-tossed pizza is going to have a flatter crust and it will also be crispier. People can usually choose depending on what they like best.
