If you are going to make a Polenta dish, you have to make sure that what you will purchase will be labeled as “polenta.” This means that the corn has been grounded in a certain way so that it will be appropriate for the dishes that you want to create.

When you say cornmeal, the grind will be a bit rougher and bigger than the polenta type. If you would choose regular cornmeal to create a dish that requires polenta, you can expect that the consistency will not be very good. You may have a dish that is too pasty, so you will have some trouble trying to make it work.
