Metal dishware is more durable than glass, and it cannot be broken, while glass dishware can break in the effect of a small force or alterations in temperatures. However, unbreakable and crack-resistant glass pans are now available. With glass pans, only a low temperature is necessary.
Glass is known to soak up more heat than the metal pans, and as such, the temperature may have to be decreased. Glass pans do not rust, on the other hand, metal pans may rust due to climate conditions. Metal pans can be used for baking.
However, for broiling, it is better to use metal pans. For eggs, tomatoes, and any food containing acidic ingredients, you will get better results with a glass pan. Also, with a metal pan, the acid could have an adverse reaction with the metal.
