To make ravioli dough: Break the egg into the bowl of flour, add olive oil and water. Mix and then lightly knead into a dough. Keep this cool as you roll it out and when flat, divide it into quarters. Cover three of these, and work with one. You will have the bowl of prepared filling ready. Spoon filling at regular intervals across the dough leaving a wide margin to the right so athat you have a set of rectangles.
Fold each empty section across the filled section and seal the edges so that you now have several parcels. eTake a pastry wheel with a fluted edge and cut around each square. Seal again. Do this with the other three sections of dough. Work quickly and handle the dough as lightly as possible.
