A general rule of thumb for foods is two months between freezing fresh and defrosting and cooking. They are safe within this time, though best to use within the two months.

If you freeze the fresh noodles within an hour of making them, and put them in covered airtight containers or heavy-duty freezer bags, you can be surest of safe and acceptable noodles when you defrost and reheat them for eating.
