Basically there are two types of noodles: the sort you cook and eat from fresh, and the sort you buy in a packet: dried noodles. There are a huge variety of noodle dishes and these rely on the variety of sauces you may serve with the noodles.
There is also the liquid that you boil the noodles in and this is important to the flavour. You can arrange how much salt you add in this fresh type of noodle whereas in dried noodles there are additives and a hefty amount of salt embedded in the noodles.
