Like pasta, noodles are made from dough. When the dough is ready it is formed into strips and dried. That's the short answer, but the making is not that simple and requires skill and patience. The dough must be kneaded for quite a time and more than once, then rested.

It has to be folded and rolled around a cloth, done in the right way, and the strips form from the rolled dough, which is cut in sections, rolled again, so that when the noodles are cut to size they are very different from the flat strips you'd get if you'd just cut them from the original rolled dough.
