This spinach salad is delicious. The only vegetables in that salad are carrots and spinach. The other items in the salad are not vegetables.
However, the best vegetables in a salad depends on the person eating the salad. Some people like lettuce instead of spinach. To me, spinach has better nutrients than lettuce. Spinach is known for having a lot of iron in it. Lettuce does not have as much iron in it. However, lettuce is used more in salads than other leafy greens. Carrots and tomatoes are also great to put in salads.
