Oh goodness, this is tricky. I guess it's best to tell her you'd like to date her but realise that she's very much her own person and in control, so you'll leave it to her to let you know if she would be agreeable to a coffee, show, drink or whatever takes her fancy.
What you don't do is make some ordinarily flirtatious move, she won't like it. Just make it clear you like her, appreciate the way she looks, admire her work ethic or whatever. If she rates you, she'll make a move.
