Research shows that the reason why food taste bad or bland on an airplane is because of decrease in our ability to taste and smell when we are on air. The air in an airplane is about 15% drier than the air we breathe when we are on the ground. The air on an an airplane is known to have a lesser pressure, this cause bodily fluids of the body to move upwards which can cause nasal congestion, this is also responsible for loss of smell.

In really sense, it is not the food that is bad, it is the way our body respond to the changes when we are on air. Many airlines are looking into ways they can make the meals they provide taste better.
