To begin, in the United States, two main breeds of chicken are bred for consumption. These are the Cornish Cross and the White Rock. Capon is also quite popular in areas of Europe and the US. It is a castrated male, typically force fed to fatten him and they are considered a delicacy.
There are other breeds of chickens that are also eaten throughout the world. In the United States, the two main varieties of chickens bred for human consumption are sold or killed at different stages depending on what they will be used for. Broiler and fryer chickens are about 6-8 weeks old and weight 2.5-5 pounds. There are also roasters, which are bigger and older; and stewing chickens.
