What cheese you add to your pizza depends on how you want your pizza to taste. The simplest pizzas that are light and have a creamy texture can be made with mozzarella. If you want more creaminess, mix provolone and mozzarella together. Provolone is mostly used because it prevents the burning of mozzarella in the oven.
