I think everyone should read The Silent Spring by Rachel Carson. This book was instrumental in sparking a conversation about the toxins we put into our environment.

Rachel Carson writes about the history of toxins, what they do to our bodies and our environment, and how the impacts are being felt even generations later. It is not only a well written book, but it is necessary reading if you want to understand how we got to where we are now in the field of environmental health. Anyone who reads this book will have a better understanding and appreciation for things like organic foods and natural living.
